Cheese Crisp |

|
Lay the flour tortilla out flat and generously sprinkle cheese all
the way out to the edges. Dot
with black olives and jalapenos, if desired.
Place the tortilla on the center rack of the oven that has
been pre-heated to 400 degrees, and bake until the edges begin to brown.
Remove from the oven carefully, very hot!!
Allow to cool somewhat, then break apart and eat. |

Chocolate Peanut Butter Smoothie |

Place all ingredients in a blender and blend until smooth. |
Ingredients: - 1 to
1 1/2 cups almond, soy or cowís milk |

Peanut Butter Roll-Ups |

|
Lay the tortilla out flat and spread generously with peanut butter. Place any combination of the remaining ingredients onto the tortilla and roll it into a tube. Let the children use their imaginations on other possible healthful additions to the roll-ups. |

Vegetables with Cheese Sauce |

|
In a saucepan on medium heat, melt the butter until bubbly, but not browning. Add the flour slowly, stirring constantly, until a thick paste forms. Add the salt and stir. Start pouring the milk in slowly, stirring constantly.
When bubbly and thickening, add the cheese and stir constantly just
long enough to melt the cheese, then remove from heat. Pour over the steamed
vegetables. Salsa can be added
to the sauce, if desired. |

zucchini or any vegetable of choice, thickly sliced and steamed Cheese
